In
Europe, of course, pastry making is a fine art—and Europeans
really eat pastries! Beautifully decorated, delicious pastries
are found in excellent bakeries in every
neighborhood. Most are much smaller than in America—just
enough to satisfy a craving for sweetness.
These
little pastries are what Willem has been dreaming about making
at Flying Star for all of his eight years with
us. Now don’t
get me wrong—Willem creates delicious, buxom cakes,
voluptuous pies, gooey bread puddings with homemade toffee,
giant éclairs and our customers have happily eaten
hundreds of thousands of them over the years.
Lately we’ve gotten the drift that Albuquerque just might
be ready for some smaller desserts. Many people have figured
out that they don’t have to forgo dessert entirely—if
they keep the portion small. We also think the American palate
is beginning to become more European—we are starting to
prefer things that are less sweet and more interesting in flavor.
And the last reason might be the economy. Everyone is thinking
of how best to spend less money yet still indulge a little. From
a calorie counting perspective or a what’s in your wallet
perspective, eating a small, but delectable dessert is very affordable
on both levels.
We are busy
creating a bunch of little pastries, which we have nicknamed “Little Luxuries”. Our goal is to keep
their price at $3.00 or under, an amazing value when you consider
the quality and the amount of handiwork that will go into each
one. There might be Lemon Meringue Tart, Heavenly Pecan Tart,
an old favorite, “Peter’s Devil” (named for
our long time pastry chef Peter Diddy) Chocolate Truffles and
others as yet undecided. We are excited that Willem will finally
get to make his favorites! If you have any favorites from your
travels, we would like to hear from you. Little Luxuries should
appear sometime in February.
