from the Farmers’ Market, Flying Star Café Santa
Fe attracts local foodies and caters to the City Different’s
overall eclectic interests and lifestyles. A sprawling 6,500
square-foot building touches an old adobe neighborhood towards
the rear and watches the NM Railrunner Express wisp by in front
of the café. With a roundhouse feeling throughout, loads
of brick and glass create a bright and airy gathering spot.
Flying Star’s signature homemade breads, handcrafted
pastries and artisanal cakes and pies are baked on-site in
the center of the café. It’s common to find bakers
chatting with customers as they pull fresh loaves and cakes
from their ovens and put the final touches on their creations.
European-style bakery displays honor the tradition of “here
today, gone today” pastry selections and friendly counter
folk proudly navigate the largest made-from-scratch menu of
any Flying Star location. A hand painted mural by Flying Star’s
Senior Designer Eli Quinn overlooks a vibrantly colored 180
seat dining room and peeks out onto an outdoor patio. Happily
embedded in a bustling new area, this café reflects
the unique culture and rhythmic pulse of Santa Fe.

At
the crossroads of four growing communities (Bernalillo,
Placitas, Northern
Rio Rancho, and Algodones), the eighth Flying Star is a living
embodiment of our own crossroads—a celebration of the
past with a nod to the future. That nod comes in the form
of a 7,500-squarefoot restaurant with panoramic mountain
views, a raised dining area fanned with street-opening windows,
and a riverbed-like patio shaded with native Burr Oak and
Chinese Pistashe trees. On-site baking of Flying Star’s
signature homemade breads, handcrafted pastries, and artisanal
cakes and pies, returns Flying Star to its original Nob Hill
roots as a neighborhood bakery. Roots are a treasured theme
throughout—as the lands were once kindly lent to the
Sisters of Loretto Convent to grow food on. That sense of
community is preserved today—as we engaged the collaboration
of our architect/building team of Ansaldi Shaw Design, Edward
Fitzgerald & Associates, and Klinger Constructors. We
also used indigenous materials for the adobe wall and created
two hand built fireplaces from third-generation local adobe
builder, Sculptured Adobe. Sandoval Community Arts, a nonprofit
organization, worked with community artists and students
to create and paint a grand mural of Bernalillo’s historic
timeline inside of the café for all to celebrate.
Next to the Flying Star is the aptly named Las Huertas retail
space, three buildings that host 12,000 square feet. We think
of this Flying Star as a roadhouse, a place to stop and hangout
along your way.

Located
on the southeast corner of Paseo del Norte & Wyoming Blvd,
this location introduces the next generation of Flying Star
Cafes. Opened during the
year of our 20th Anniversary, it’s 5,225 square feet
interior leans towards European-style bakery displays with
energy-inducing décor and earthy accents. While enjoying
just baked homemade breads and pastries, floor to ceiling windows
offer breathtaking views of the Sandia Mountains. Our signature
petio (dog-friendly patio) invites a refuge from the hustle
of Paseo del Norte, while providing a community gathering spot
for the diversity of nearby neighborhoods. This café serves
busy commuters, athletes, families, hobby clubs, business owners
and students a small celebration in their daily routines. Designed

Our
first Westside location creates its own peaceful world
just north of Alameda
Blvd on Corrales Road, near the corner of 5 highways and
the Bosque Trail. The interior is one of our funkiest: with
lavish booths, oversized windows, views of the mountains,
armfuls of natural light, and a mural by artist Inez Foose.
This location includes a Hospitality Room (Conference Room)
which is perfect for community meetings, catered lunches
and dinners, and classes/seminars. Designed by our architect
team of Ansaldi Shaw Design, Edward Fitzgerald & Associates
and built by Klinger Constructors. Named after the original
land deed, Acequia de Corrales hosts a collection of fantastic
shops and offices in addition to Flying Star. We often serve
bicyclists, joggers, bird watchers, and horseback riders
who enjoy the rural feel of our plaza while being minutes
away from a commercially plentiful zone.
The building, originally the Southern Union
Gas Co. was designed in 1950 by the regionally famous architect,
John Gaw Meem.
The gas company stopped using it about 17 years ago and the
building has been vacant ever since. Thanks to the efforts
of our landlords, Jay Rembe and Chris Calott, plus our architect
team of Ansaldi Shaw Design, Ed Fitzgerald & Associates,
and Klinger Constructors, the building has been carefully restored
and embellished. Recently, it was granted status as a National
Historic Place. Our Hospitality Room (Conference Room) upstairs
has space for community meetings, catered lunches and dinners,
or classes/seminars.
On Rio Grande Blvd, formerly known as Rural
Route 2, this Flying Star is in the heart of Albuquerque's
North Valley.
Large cottonwood trees and pastures surround the cafe, which
is nestled in a small shopping plaza filled with charming shops.
Ride up on the bridle path behind the center and hitch your
mount to the hitching post. On crisp nights sit before an enormous
stone fireplace with your canine companion in the "Petio" or
run next door to Bookworks to buy a book before sitting down
to a dinner.

Our smallest location is right in the middle of one of Albuquerque's
largest business districts. Despite this, you will find an
eclectic crowd - lawyers, artists, massage therapists, priests
from the Catholic school down the road, teachers and other
restaurateurs. Flying Stars seem to attract just about everyone.
Located in the far Northeast Heights, this
Flying Star has two beautiful patios - one featuring planters
filled with hundreds
of different New Mexico native wildflowers and plants, and
another "Petio" for dogs and their owners. Built
in 1995, this spacious location has a huge mural by New York
artist Inez Foose celebrating our bakers. A long magazine rack
with about 800 titles has it's own bar to make browing easy.

The first-born Flying Star (1987) is located in the historic
Nob Hill District on old Route 66. Nob Hill is a profusion
of classy clothing shops, antiques and world wandering, gift
shops. The neighborhood's proximity to the University of New
Mexico and its concert halls keeps the clientele colorful and
the cafe hopping day and night.
