Locally made chevre (goat cheese from Estancia's Old Windmill Dairy) rolled in honeyed walnuts on a mountain of spring greens tossed in a cream Dijon chevre dressing. With fresh herbs, diced red bell peppers, Kalamata olives, & chunks of quartered oranges.

All-natural and homemade by our Executive Bread Baker, Rock Ramsey and the Flying Star bread bakers.

After numerous and numerous--I mean 18 different variations--I finally settled on the perfect recipe for our Ugly Muffin. This muffin has a face only I could love, it's true. It's also hands-down one of the healthiest on the market today, incorporating 18 all natural ingredients and no refined sugar or flour. I strongly suggest that you enjoy this product warm, as heating it just a little encourages the honey to soften. It's ugly, I know--but I'm sure that you'll enjoy it as much as I enjoyed creating it for you.

New to the Flying Star bakery case is my variation of the English Muffin. It's a bit more buttery and dense than the traditional English Muffin which results in a moist, flavorful, savory product. Our test markets preferred our English Muffin lightly toasted and solo. It has enough flavor to carry it without accouterments. Taste and enjoy.

Our breads are created with aged doughs and homebrewed starters. We steam the dough in the baking process for thick chewy crusts. These are gutsy, flavorful and healthy breads.
